These mountainside doors were all over Santorini... People carve out beach homes since pumice rock is soft enough to do this!

Red Beach- so gorgeous and there were tons of Greek artists selling their work on the 2 mile hike to get to the beach! I was in heaven.

Game Night Recipes

Here are some things I made up for our board game night Friday that went over REALLY well…

The first was an appetizer christened “Meat Surprise” by a guest. It’s thinly sliced Genoa salami (the good Italian kind) stuffed with  jarred fire-roasted bell pepper (we used Trader Joe’s- shout out to TJ’s!) and sprinkled oregano then folded like an envelope with a toothpick in it! Also pictured is a simple appetizer- sliced Asian apple-pears sprinkled with balsamic vinegar- YUM!

For dinner we had spinach gorgonzola pasta… I got this recipe from Gayle’s Bakery & Rosticceria (the BEST place to eat and get Princess Cake in Santa Cruz/Capitola Beach!) It is posted on their website if you want to Google it…

Last minute I realized we needed some veggies. Partly for a well balanced meal and partly because I wanted to use my cute lime green and cobalt ramekins! So I scrambled in our not-so-well-stocked kitchen to put something together and it came out surprisingly tasty!

I never measure anything but I mixed together some: green beans, sliced asparagus, flax seeds, sliced almonds, capers, lemon juice, olive oil, balsamic vinegar, tons of garlic, lemon zest and a shallot together and topped with a slice of lemon! I baked it for about 20 minutes until the lemon started browning at 350 degrees and voila! A side dish!

These were great easy dishes that lead to a great night of Settlers of Catan, Agricola and other obscure board games… Fun times!
